Open your phone’s voicemail app, then tap (or in some cases, tap and hold) the message you want to save. You should be presented with a list of options; the save option will usually be listed as “save”, “save to phone,” “archive,” or something similar.

Your iPhone does have a voicemail password, but you only have to enter it once and many new iPhones set it up automatically. However, there still needs to be some form of authentication between your carrier and your iPhone to download your voicemails. Even though you don’t see it, your voicemail password still exists.
This isn't going to work for all carriers. On mine (AT&T), calling my own number dumped me into the audio voice mail menu and didn't record. You could always try calling the person on the other line again—you'll go directly to their voice mail, certainly. They could send you the recorded "voice mail" conversation after. However, that's not something most interview subjects want to get involved in.
To close the Phone app, begin by double-pressing the Home button. This will open the App Switcher, which will display all the apps you currently have open on your iPhone. Use your finger to swipe up on the Phone app. You’ll know the Phone app is closed when it no longer appears in the App Switcher.
3. Settings menu. To access your voicemail setting menu, press and hold the 1 key or dial 123 on your device dial pad. If this doesn't work, dial 1-805-637-7249, enter your 10 digit number and while the voicemail greeting is playing, press * (star key) and enter the password.

Access to Visual Voicemail does not negate traditional voicemail access. You can still access it by tapping the 1 key on your phone.
Play on phone enables you to play your voice mail messages over a telephone using the phone number you specify.

I could press play and then if I don't like what I hear, I could press record one more time and when I'm satisfied, I could press save on the top right and it's going to save my greeting and that's all I have to do to set a new voicemail on my iPhone.
