First I would check the phone to see if it saved the greeting to its files. Some phones do and some don’t. If you are unable to find the voicemail greeting file, google the question for your type of phone. If you’re unable to find it or do it, call youe cell phone carrier to see if they can help. Some carriers still save voicemail greetings on their systems. It’s a great reminder though that if you have a greeting you really want to keep, to make sure you record it and save it to your computer and to a flash drive or cloud drive for good measure. Feel free to add a personal touch to make your voicemail message fun and interesting. Clients will feel reassured when they know their messages have been received and you will get back to them.

Instead of recording and sending a greeting through your phone’s voicemail system, you can use a visual voicemail application installed on your phone.

Step 5. In the greeting section, select whether you want the greeting to be default or custom. Choose custom if you want to record your own voice for a personalized greeting.
Head over to Settings → Phone → Call Forwarding → Ensure the toggle is set to off.
iOS (the iPhone operating system) uses a system similar to Trash on a Mac, in that deleting a voicemail will remove it from view but not necessarily remove the file completely. If your iPhone is still picking up that file, it will show as not being able to be deleted.

This isn't going to work for all carriers. On mine (AT&T), calling my own number dumped me into the audio voice mail menu and didn't record. You could always try calling the person on the other line again—you'll go directly to their voice mail, certainly. They could send you the recorded "voice mail" conversation after. However, that's not something most interview subjects want to get involved in.
