Once you’ve done that, head to the settings menu (the gear icon) on the Google Voice homepage and select Settings. Then, click the Calls tab. In the section “Call Options,” check off “Enable recording (4), Switch (*) and Conference options on inbound calls.” With this setting selected, whenever you make a Google Voice call on your phone, you can tap the number 4 on its dial pad to start recording.

On the iPhone, go into voicemail and tap "Greeting". Record a few seconds of something and tap stop. Before you tap save, use iFuntastic or SFTP to navigate to /var/root/Library/Voicemail on your iPhone. You'll see a file called "Greeting. amr". This is the audio you just recorded. Delete that file and replace it with your custom message which should then be renamed to "Greeting.amr". Tap "Play" on the iPhone to verify your message works. If it plays, tap "Save" and your custom message will be uploaded to AT&T's servers.
An option with far fewer cables is the RecorderGear PR200. It records your conversation via Bluetooth. The call button in the middle of the device can answer calls on the Bluetooth-connected phone. Hold the PR200 up to your head to talk and listen, as if it's the phone. It also features a USB end to quickly access recordings on the computer. It will hold about 144 hours of conversation before it fills up the 4GB of storage. It also records like any digital recorder sans smartphone, since it has an external pin-hole microphone.
