If you’ve already created a custom voicemail on your iPhone, you can tap Play to see how your voicemail sounds. If you’re interested in creating a new message, tap the Custom button. From here, you can start recording your message by tapping Record and tapping Stop whenever you’re finished. Once you’re finished recording, tap on Play to make sure the message comes across as you’d like and hit Save (in the upper right) to save it as your voicemail.
If you haven't used that free Google Voice account in a while, check it out. It provides free voice mail, a free phone number, call-around service (it'll ring as many IRL phones as you want it to until you answer), and yes, even conversation recording on incoming calls. While it's possible to make an outbound call using the Google Voice app on your iPhone, you can't record them with Google Voice.

The service also recommends stating your name, apologizing for missing the call and that you will call them back. If possible include a time frame for a return call. Don’t ramble or include un-needed information.

My iPhone always seems to jump to voicemail before I answer it. I need to increase the call forward delay. By increasing the delay before the call is transferred to voicemail, I have a better chance of grabbing it. As expected, the caller will hear an increased number of rings before being transferred.

Open your Phone app. Tap Voicemail. Select Greeting. By default, your voicemail will be setup with your carrier's generic greeting. To record a custom greeting, select Custom. Tap Record to begin recording your voicemail greeting. When you finish recording, tap Stop. To make sure you're happy with your new greeting, tap Play.
If for some reason you are unable to use either type of voicemail and can’t seem to get it figured out for the life of you, it could be a good idea to contact your cell provider to see what your options are and why your voicemail might not be working.
